How to:
Combine gelatin and ½ cup cool water in the bowl of an electric mixer, Mix briefly to combine; set aside.
Combine sugar, corn syrup, salt, and ½ cup cool water in a deep saucepan. Cook over medium heat, until sugar dissolves. Don’t stop stirring.
Raise to high heat and cook, stop stirring, and wait until the syrup reaches 240°F on your thermometer.
Remove from heat, and slowly pour syrup into mixer. Increase speed to high and whip until the mix is fluffy and thick, about 3 minutes. Add vanilla.
Spread mixture into a greased 9x13 inch pan.
Sprinkle powdered sugar on top, let sit overnight, then cut using a greased knife.
Serve with a hot drink, such as Spiced Hot Cocoa, or bundle it up as a gift!
